Dried paprika in cooking
To obtain the spicy variety, the seeds, which contain the pungent flavor, are not removed from the paprika and are cut rather than ground. Paprika is an excellent natural coloring agent for many dishes, but you need to remember that dried paprika does not tolerate long-term heat treatment, loses all its benefits and becomes bitter (calorizer). Therefore, it is necessary to add it to hot dishes literally a minute before the end of cooking. This time is enough for the paprika to give off its taste and reveal the aroma.
Hungarian, Bulgarian, Mexican and many other cuisines cannot be imagined without dried paprika. It has long been noted that people who gladly add paprika to their dishes are less likely to suffer from stomach diseases and look young and feel cheerful.
Dried paprika is traditionally added to seasoning mixtures for marinades and sauces, and goes well with meat, poultry, seafood, cheeses, eggs and vegetables.
