Use of mustard in cooking
Mustard is good as a separately used spice, both in the form of a sauce and in a granular state (the so-called French). It enhances the taste of all types of meat, imparting spice to pork, softness to lamb, and emphasizes the nobility of beef.
It can be coated with meat before putting it in the oven, and can also be added to complex marinades along with honey, mayonnaise, etc. By the way, it can turn even the toughest tenderloin into an unusually tender one.
It is impossible to imagine mayonnaise without mustard powder.
And other complex sauces, including sweet ones, which are so popular in Italy, contain mustard.
It is an essential component of the curry seasoning mixture.

It also contains potassium salt and sinigrin glycoside, which are to blame for the bitter taste of the powder.
