Description
Outwardly, it is very similar to black pepper, but surpasses it in size! If we compare the aromas of these two spices, then there will be even less in common: allspice peas (Myrtaceae family) exude a softer, lighter fresh and complex – unique in its kind – smell, which also contains notes of simply black pepper (Pepper family). And the “bouquet” will also include a train:
carnations;
nutmeg;
cinnamon;
ginger
The taste of the ripe fruits of Pimenta dioica is also vaguely – with notes – reminiscent of black pepper, only not so hot, but more really spicy, sweetish, rich, multi-component.
How and where it is produced
It is believed that the homeland of this spice is the Caribbean Islands (according to other versions – Southern Mexico and Jamaica), from where it was brought to Europe by H. Columbus. Thus, thanks to the famous navigator, allspice spread to many warm countries, where it is, in fact, cultivated on an industrial scale today. The largest plantations are cultivated in two countries:
Brazil;
Cuba.
The peculiarities of the technology for preparing the spice make it impossible to export raw materials: allspice is made only in the places where it grows, by collecting unripe blue-green berries with unhardened skin. Next, they are sent for natural (5-10 days) or artificial (special drums) dehydration until dry with the appearance of a brown color and a rough, granular surface of the shell. Ready-to-use spices are packaged.
Varieties
This spice has practically no differentiated varieties (but there are varieties – extra, highest, first). The grains are sold under the same trade name: “Allspice”, since the harvest is taken from the same perennial tree – Pimenta officinalis (dioecious).
The main feature is considered to be blood thinning and a decrease in its ability to form blood clots. That is why chewing peas can lower blood pressure by improving the permeability of blood vessels.
Bactericidal pepper is no less effective in the treatment of flatulence and food poisoning: healing tea is infused with peas. Here are four more wonderful abilities of this spice:
disinfects the oral cavity;
improves metabolism;
helps eliminate depression;
improves cognitive functions of the brain;
slows down skin aging.
It also gives a charge of vitality and vigor.
Harm and contraindications
People with the following pathologies should avoid eating spices:
allergies (individual intolerance);
spastic colitis;
reflux esophagitis;
low blood clotting;
stomach ulcer.
Due to the risk of bleeding, it is not recommended to eat peppers for those preparing for surgery.
How to eat it
This is a universal-purpose savory flavoring additive used in whole and ground form in all five categories of dishes:
snacks (pate, jellied meat, sausages, lightly salted fish);
soups and stews (solyanka, ukha, borscht, etc.);
second (goulash, stewed vegetables, salads);
desserts (flambé, gingerbread);
drinks (grog, compote, mulled wine).
When cooking with this pepper, two nuances need to be taken into account: the full disclosure of essential oils occurs only after a 20-minute heat treatment and one should not exceed tiny dosages in order to avoid obtaining a too rich taste and smell. If there is a lot of spice, instead of an elegant highlighting of the components, complete dominance will occur. Initially, it was “tasted” by the Indians, adding crushed peas to a cocoa drink. By the way, the leaves of this spice were also used: the Indians made medicine from them.
